Gingerbread Pancakes

Whether you're trying to keep morning sickness at bay or you simply want a cozy breakfast that tastes like the holidays, these pancakes are a delicious option.

There’s no way around it, morning sickness is terrible. You feel hungover, but you’re not because you’re not allowed to drink wine, the reminder of which, is extra sad. Morning sickness typically begins around six weeks and typically lasts through week 14. I made it to week nine before the morning sickness kicked in, and I am so so grateful I didn’t have to battle it out for the whole eight weeks. In the midst of it, I also experienced what several women experience in the early stages of pregnancy, a heightened sense of smell or hyperosmia. For me, I kept smelling garbage no matter how clean the house was. Let me tell you, this did not help with the nausea. After a few weeks of popsicles and toast, I had some girlfriends come over for a movie night. Feeling optimistic, I ordered pizza for everyone, but I couldn’t even look at it without feeling sick. It was a dark time.


In a desperate attempt to find something new to eat and help with the nausea, I began thinking of different foods that had ginger in it, and though gingerbread cookies sounded too sweet, I thought a gingerbread pancake might do the trick. Not only was I able to keep these down, but the strong smell of ginger and cinnamon while they cooked also gave me a brief break from the constant scent of imaginary trash. Double win!

What ingredients do I need for gingerbread pancakes?


  • All Purpose flour

  • Baking powder

  • Baking soda

  • Ground ginger

  • Fresh ginger- this is optional but I was really determined to get those anti-nausea benefits

  • Ground cinnamon

  • Salt

  • Molasses- make sure it's unsulphered and not blackstrap (the flavor is way too intense)

  • Vanilla extract

  • Brown sugar

  • Eggs

  • Unsalted Butter- can substitute with coconut oil

  • Milk- I've used both 2% milk and vanilla almond milk with great results

  • Maple syrup- for serving

Can I freeze leftover pancakes?



These pancakes freeze very well, making them great for a quick morning breakfast. Let them cool completely and then place them in a freezer-friendly Ziploc bag. I didn't have any trouble pulling them apart to reheat but if you want to be extra sure, you can place a square of wax paper between each pancake before freezing.



How do I reheat leftover pancakes?



I recommend using the toaster! Put one in each slot and toast at medium heat. You may need to toast them twice to get them warm all the way through. I needed one time at the five-level setting, but every toaster is different.



How many pancakes does this make?



You will get about 12 four-inch pancakes.

Ingredients:

  • 2 cups all-purpose flour

  • 1 ½ tsp baking powder

  • ½ tsp baking soda

  • 1 tsp salt

  • 2 tsp ground ginger

  • 2 tsp cinnamon

  • 1 ¼-1 ½ cups milk of choice (begin with 1 1/4 cup and add an additional 1/4 if batter is too thick)

  • ½ cup unsulphered molasses (not blackstrap)

  • ½ tsp vanilla extract

  • 2 eggs

  • 4 Tbsp unsalted butter or coconut oil, melted, plus more for serving

  • 3 Tbsp brown sugar

  • 2 tsp grated fresh ginger (optional)


Directions:

  1. Combine flour, baking powder, baking soda, salt, ground ginger, and cinnamon in a medium-sized mixing bowl and whisk together

  2. In a separate large mixing bowl, combine molasses, vanilla extract, eggs, 3 Tbsp butter or coconut oil, brown sugar, and grated ginger

  3. Slowly mix the dry ingredients into the wet until they are fully incorporated.

  4. Heat a griddle over medium heat

  5. Spread 1 Tbsp butter across the griddle (use nothing if you're using a nonstick griddle)

  6. Use a 1/4 dry measuring cup to pour your pancakes (or 1/3 cup if you want larger pancakes)

  7. Once tiny bubbles begin to form on the top of the batter they are ready to be flipped.

  8. Cook for about another minute and set the finished pancakes on a plate

  9. Serve with butter and maple syrup if desired


Notes:

Set your oven on warm and put the finished pancakes on an oven-safe plate to keep them nice and warm before serving.
