Regardless of the season, you can never go wrong with a Moscow Mule. I've spent many an August happy hour getting sunburned while enjoying its bright citrusy flavors in an icy cold copper mug. But the warmth from the ginger also gives off serious cozy vibes, making it a great option for winter holiday parties and nights by the fire pit.
I went on a big ginger kick during my first trimester to help with my morning (but actually all-day) sickness. On a relentlessly hot Tennessee Saturday when I was grouchy and hot-flashy and seriously craving a cocktail, I realized the one thing I hadn't tried yet was a Moscow Mule. This version is sans vodka, but you won't miss it thanks to the zesty ginger flavor and a homemade lime simple syrup that gives it some extra flair.
What ingredients do I need to make virgin Moscow Mules?
Ginger beer- not ginger ale
Lime juice- fresh is best
Club soda or sparkling water
Fresh mint - optional garnish

Can I prepare this recipe ahead of time?
You can make the lime simple syrup ahead of time. It takes about an hour to make and can be stored in the fridge for up to three months, so you can save yourself a lot of time by making this beforehand. Since both the ginger beer and club soda are carbonated, I suggest assembling your mocktail right before drinking to keep it from going flat.
What foods pair well with virgin Moscow Mules?
Foods that share similar flavors like ginger and lime work really well with this drink. Dishes like Pad Thai, citrus-marinated fish, and curries like my lentil and sweet potato curry would all be delicious options!
What's the difference between ginger ale and ginger beer?
Ginger beer is fermented with real ginger and sugar, while ginger ale is typically made with artificial ginger flavoring.

Ingredients:
1–2 Tablespoons lime simple syrup
2 Tablespoons fresh lime juice
¾ cup ginger beer
¼ cup club soda or sparkling water
Lime wedge and/or fresh mint for garnish (optional)
Directions:
Prepare your lime simple syrup if you haven’t already
