Ripe peaches and nutrient-rich chia seeds provide a healthy breakfast that helps your baby develop strong bones!

At two months in, your baby is only the size of a Hershey’s kiss, but that little nugget is already forming bones and muscles! This means they need a lot of calcium, and if you’re not getting enough to pass on to the baby, they will absorb it from the existing stores in your bones. Does this mean you need to start downing giant glasses of milk every day? Heck no! One of the many amazing health benefits of chia seeds is that they contain even more calcium than milk- two Tablespoons has 15% of your daily requirement, and this recipe has twice that amount.
I typically make a basic vanilla chia pudding, but it’s peach season right now so I’ve been looking for different ways to enjoy my weekly haul. Nashville gets regular visits from The Peach Truck during the summer and I follow (stalk) them on social media to make sure I never miss them at the farmer's market.
This recipe works best with very ripe peaches because they have more flavor and are easier to blend to a smooth consistency. Simply blend everything together, stir in your chia seeds, pour the mixture into a mason jar (or a stemless wine glass if you’re feeling fancy) and put it in the fridge! It takes a minimum of four hours to set, but tastes best after sitting in the fridge overnight.
What ingredients do I need to make this recipe?
Milk- use any kind you like, I prefer unsweetened vanilla almond milk
Vanilla extract
Honey
Chia seeds
Peaches- can be fresh or frozen (and thawed). The riper the better!
Optional toppings- Granola, fresh fruit, and shredded coconut are some of my favorites

Can I customize this chia pudding?
You can use any milk you like such as cow, soy, almond, and coconut milk. You can swap out the honey for a different sweetener such as agave or maple syrup. Once the pudding is set, you can top it with crunchy granola, shredded coconut, fresh fruit, or enjoy as is!

This recipe will fill two 8 oz glasses or one 16 oz glass.
Are chia seeds safe to eat during pregnancy?
Chia seeds are generally safe to eat during pregnancy, but if you take medication to manage your blood sugar, you should talk to your doctor before adding them to your diet as they can interact with certain medications.
What are the health benefits of chia seeds?
Not only are chia seeds a great source of calcium, but they are also rich in fiber, protein, and omega-3 fatty acids.

Ingredients:
1 cup milk of choice
½ tsp vanilla extract
2 Tbsp honey
2 cups ripe peaches, peeled and roughly chopped (about 2 medium peaches + more if using as a topping)
4 Tbsp chia seeds
Directions:
Put all of the ingredients except for the chia seeds into a small blender or food processor and blend until smooth
Thoroughly stir in your chia seeds to avoid clumps
Pour the mixture into your mason jar or glass and cover
Store in the fridge for at least 4 hours but preferably overnight
Top with additional fresh peaches or desired toppings and enjoy!
